Pumpkin Oatmeal Cookies

I have modified my favorite recipe to be more alkaline.  I was thrilled it turned out.

Pumpkin Oatmeal Cookies

1/2c cooked oatmeal

1/2 c pumpkin puree

1/2 c sweetner (raw sugar, xylitol, stevia, black strap molasses)

1/4 c vegetable shortning or coconut oil

2 eggs +1/8 t cream of tartar

zest of 1 lemon, juice of 1/2 lemon

2 c flour ( I used 1 c almond + 1 c pumpkin seed +1/4 c tapioca+1/4c potato starch+ 1t xanthum gum)

1t baking soda & baking powder

2t cinnamon

1t nutmeg, ginger

1/2 t salt, 1/4 t all spice, 1/4t cloves

1 c coconut flakes

6 oz chocolate chips

Blend dry ingredients before adding to wet.  Let batter sit for a half hour and drop by spoonful onto greased cookie sheet.  Bake at 375 for 15 min. Makes about 2 dz.
