Pumpkin Turkey Chili
This can be done in the crockpot or stove top.
1 can pumpkin purée or cooked pumpkin, purée with water, about 2c
1lbTurkey breakfast sausage, crumbled, cooked and drained (optional)
Saute 1/2 each diced red,green, orange, yellow bell pepper +1sweet onion+3 cloves garlic+1jalepeno
You can add spices to the sautéed veggies for 1-2 min.: 2t cumin, 1t curry, 1t turmeric, 1t ginger, 1t cinnamon, 1/8t coriander, 1/8t cloves,1/8t cardamom. Add all ingredients to pot and simmer.
Add in 1 can of black beans, 1/2 can of pinto beans, 1/2 can of cannelini beans
Simmer chili for 2+ hrs stovetop, high crockpot for 3+hrs, low crockpot 6+hrs. Add fresh cilantro and/or finely chopped Kale along with your favorite cheese if you want and enjoy! Goes great with gluten-free cornbread topped with coconut oil and honey.
