This is my basic muffin recipe.  Muffins can be made a day ahead and warmed in the oven or microwave for nutritious breakfast or lunch served with fruit, or a snack anytime.

Basic Muffin Recipe

Mix: 1/2 c sweet (sugar, raw sugar, molasses, xylitol, agave, jam, fruit puree or sauce, honey or mixure of any of these); 1/4-1/2 c fat (oil of choice, shortning, butter); 1 egg; 1 c milk, soy milk, rice milk, almond  milk, or coconut milk or yogurt.

Add:  2 c. flour/grains (oatmeal, buckwheat, flax); 2-3 tsp baking powder; 1/2 t salt; 1/2-1 tsp of spice of choice- cinnamon, nutmeg, rosemary, etc.)

Fold in:  1/4-1/2 c berries, dried fruit, nuts, chocolate chips, cheese.

Note: for cheese or savory muffins leave out the sweet.

Bake at 375 for 20-25 min.
